3 1/2 c. tart apples, chopped 1 c. melted butter 2 eggs 2 c. sugar 3 c. flour 2 tsp. baking soda 1/2 tsp. salt 1/2 tsp. each cinnamon, cloves, allspice, nutmeg 1 c. chopped walnuts Can also add dates, raisins, currants, and/or candied fruit. Mix by hand: Combine sugar with apples, let stand. Stir a little of the dry mixture into the nuts. Add melted butter and apple mixture; then beat in eggs. Blend in dry ingredients and then nuts. Turn into well greased and floured tube pan. Bake for 1 hour at 375 degrees. Cool 5 minutes and turn onto a plate. GLAZE: 1 stick butter 2 tbsp. hot water 1 1/2 c. powdered sugar Mix and use as directed. |
