CAJUN CHICKEN 
Chicken breast (best)
1 chopped onion
1 green pepper
1 red pepper
3 garlic cloves
1/2 c. soy sauce
28 oz. tomatoes
1/4 tsp. cayenne or red pepper (or mix together)
Okra (amount you want)

Brown chicken thoroughly in deep skillet; remove. Add chopped onion, peppers, and garlic; saute. Stir in soy sauce, tomatoes, and red or cayenne pepper or both. Bring to a boil. Arrange chicken in sauce. Cover and simmer 1 hour, turning pieces over once. Stir in okra and simmer until real tender. Serve over cooked hot rice.
