CAJUN CHICKEN AND RICE 
1 chicken
Bacon drippings
Onion salt
Garlic salt
Parsley flakes
Red pepper flakes
Paprika
Black pepper and salt
Minced green onion, flakes or fresh
1 can tomatoes
1 can tomato sauce
1 bell pepper
1 onion

In iron skillet, put bacon drippings to cover bottom (of course, you can use vegetable oil). Sear chicken and while you are doing that, sprinkle with all the spices. Add vegetables and saute.

Cover, turn fire down, and simmer about 30-40 minutes. Then add tomatoes and sauce; cook 15 minutes longer. Thicken sauce with flour and water and cook until desired consistency. Serve with rice.
