SCRUMPTIOUS STRAWBERRY BREAD 
1 c. butter, softened
1 1/2 c. sugar
1 tsp. vanilla
1/4 tsp. lemon extract
4 eggs
3 c. all-purpose flour
1 tsp. salt
1 tsp. cream of tartar
1/2 tsp. baking soda
1 c. strawberry jam
1/2 c. dairy sour cream
1 c. chopped pecans, if desired

Heat oven to 350 degrees. Grease and flour bottom only of two 9 x 5 x 3 inch pans. In large bowl, cream butter, sugar, vanilla and lemon extract until light and fluffy. Add eggs, one at a time, beating well after each addition; set aside.

In separate bowl, combine jam and sour cream; stir into flour mixture. Stir in nuts. Combine flour mixture with creamed mixture; mix well. Turn into greased pans. Bake 50-60 minutes or until toothpick inserted in center comes out clean. Remove from pans; cool on wire rack. 2 loaves.
