ORANGE BREAD
Cut up the rinds of 4 or 5 oranges. Cover with water and bring to a boil. Drain, cover with water again and boil for 10 minutes. Drain and grind the orange peel, add 3/4 cup water and 1 1/2 cups sugar. Cook like jam and then let it cool. It will make about 2 cups.

Now cream 3 tablespoons butter with 1 cup sugar; add 3 eggs, beaten, 4 cups flour, sifted before measuring; 4 teaspoons baking powder, 3/4 cup milk, 1 teaspoon salt and the cooled jam. Pour into 2 buttered bread pans. Bake in very moderate oven 1 hour. If the bread has not browned at the end of 3/4 of an hour, turn up the heat a little. Make bread the day before you need it or it will be hard to slice nice and thin. Butter and put together like sandwiches and cut in desired shapes and sizes.
