SCALLOPED POTATOES WITH PORK
CHOPS
 
6 pork chops, cut 1/2 inch thick
2 tbsp. cooking oil
Salt and pepper
3 tbsp. butter
2 tbsp. flour
1 1/2 tsp. salt
1/4 tsp. pepper
2 c. chicken broth
6 c. sliced pared potatoes
1 med. onion, sliced and separated into rings

Brown pork chops on both sides. Melt butter in saucepan. Stir in 1 1/2 teaspoon flour. Add chicken broth. Bring to boil, stirring. Pour potatoes in 11 x 7 1/2 inch baking dish. Top with onion rings, then pork chops.

Bake 1 hour at 350 degrees covered with foil. Remove foil and bake 30 minutes longer or until meat is tender. makes 6 servings.
