ENGLISH MUFFIN LOAVES 
2 pkg. dry yeast
1 tbsp. sugar
2 tsp. salt
5 c. unsifted flour
3/4 tsp. baking soda
2 c. milk
1/2 c. water

Combine first 5 ingredients. Heat liquids to 120°F. Add to dry ingredients. Spoon into 2 (8 1/2 x 4 1/2) pans, greased and sprinkled with cornmeal. Cover. Let rise in warm place for 45 minutes. Microwave on High 6 1/2 minutes. Let rest 5 minutes. Turn out to cool. When cool, I slice and store in freezer bag in freezer. Take out slices as you want.

Makes great toast.

Since microwave ovens vary in power, you may need to adjust your cooking time.
