OATMEAL-RAISIN COOKIES 
3 1/4 c. all-purpose flour
1 1/2 tsp. cinnamon
1 tsp. baking soda
1 tbsp. baking powder
1 tsp. salt
2 c. plus 2 tbsp. shortening
1 3/4 c. packed brown sugar
1 1/2 c. white sugar
3 eggs
1 tsp. vanilla
4 c. oats
2 1/2 c. raisins

Blend first five (dry) ingredients. Cream shortening, sugars, eggs and vanilla until fluffy. Mix in dry ingredients until blended. Blend in oats and raisins.

To make each cookie, place approximately 2 1/2 tablespoons of dough on cookie sheet, press down until cookie is about 1/4-inch thick. Bake at 350°F for 9-12 minutes. Let cool on baking sheet.
