FRUIT 'N NUT CHICKEN SALAD 
3 c. diced chicken
1 1/2 tsp. minced onion or onion powder
1/2 tsp. salt
1/2 c. chopped celery
1/4 c. slivered almonds
1/2 c. seedless grapes, chopped in halves
1 (11 oz.) can mandarin oranges, drained
1/2 c. mayonnaise
1 tsp. lemon juice

In a large bowl, mix chicken, onion, salt, celery and lemon juice. Refrigerate for 1 hour. After 1 hour, mix in remaining ingredients and serve on a bed of lettuce. Serves 6 to 8.
