STUFFED PEPPERS 
4 oz. ground turkey
1 c. cooked brown rice
2 tbsp. chopped onions
2 med. bell peppers
1/2 c. tomato sauce
Salt, pepper & chili powder to taste

Mix the turkey, rice, onions, salt, pepper and chili powder and 1/4 cup of tomato sauce. Stuff the peppers with the mixture. Put in casserole dish and add the remaining 1/4 cup tomato sauce to the top of the pepper. Bake at 350 degrees for about 30 or 40 minutes or until done. (This recipe serves 1.) Serving = 4 ounces protein, 1 cup vegetable, 1 cup starch.
