“BACON & CHEESE OVEN PANCAKE” IS IN:

BACON & CHEESE OVEN PANCAKE 
1/2 lb. bacon (about 8 slices)
1 cup all-purpose flour
2 tbsp. sugar
1 tbsp. baking powder
1/2 tsp. salt
1 beaten egg
3/4 cup milk
1 cup shredded sharp Cheddar cheese (4 oz.)
butter
maple syrup

Cook bacon till crisp; drain, reserving 3 tablespoons drippings. Crumble bacon and set aside.

In bowl stir together flour, sugar, baking powder, and salt. Combine egg, milk, and reserved bacon drippings; add all at once to dry ingredients, beating with rotary beater till smooth. Stir in bacon. Spread batter evenly in greased and floured 15x10x1-inch baking pan.

Bake in 425°F oven for 15 minutes. Sprinkle with Cheddar cheese; bake 2 to 3 minutes more till cheese is melted. Cut in squares. Serve with butter and maple syrup.

Makes 4 to 6 servings.
