DUTCH APPLE CHEESE PANCAKES 
PANCAKE:

1/4 c. butter
2/3 c. flour
3/4 c. milk
2 eggs
1/2 tsp. salt

In large bowl combine; flour, milk, eggs and salt with wire whisk. Beat until smooth. Heat oven to 400 degrees. In 9 inch pie pan, melt 1/4 cup butter. Bake until dark brown, 17-23 minutes.

FILLING:

2 tbsp. butter, melted
2 tbsp. cold water
2 tbsp. corn starch
1/3 c. brown sugar
1/2 tsp. cinnamon
2 med. cooking apples, cored and sliced
1 c. shredded Cheddar cheese

Add cold water and cornstarch in small bowl. Add butter. Combine brown sugar and cinnamon and add to above mixture, cook stirring constantly 1-2 minutes. Add the apples and cheese to the butter mixture and stir. Spoon filling into cooked pancake and sprinkle with cheese. Serve immediately.
