AROMATIC YELLOW RICE | |
2 c. long grain rice 1 pt. water 1 1/4 tsp. salt 3/4 tsp. ground turmeric 3-4 whole cloves 1 stick of cinnamon (1 inch in length) 3 bay leaves 3 tbsp. unsalted butter, cut into sm. pats Put the rice in a bowl and wash in several changes of water. Drain. Pour 2 pints of fresh water over the rice and allow to soak for half an hour. Drain the rice. Combine the drained rice with one pint water, salt, turmeric, cloves, cinnamon stick, and bay leaves in a heavy pot and bring to boil. Cover with a tightly fitting lid, turn heat to very low, and cook for 25 minutes. After cooking, let the pot cool, while covered, for 10 minutes. Add pats of butter and mix well. Remove the whole spices and serve. Serves 6. |
