CHICKEN AND YELLOW RICE 
1 lg. frying chicken
1 onion, diced
2 cloves garlic; crushed
1/2 c. olive oil
6 oz. tomatoes
1 1/2 qt. water
1 bay leaf
Pinch of saffron
2 tbsp. salt
1 lb. rice
1 green pepper, diced
2 pimentos or small jar
Small can green peas

Cut chicken into quarters. Fry with onion and garlic in olive oil until brown. Add tomatoes and water. Boil 5 minutes. Add bay leaf, saffron, salt, rice and diced pepper. Stir thoroughly. Place in a large casserole and bake in 350 degree oven 20 minutes. Garnish with peas and pimentos.
