SPECIAL YELLOW RICE AND CHICKEN 
1 lb. pkg. thin bacon, cut in sm. pieces
1 sm. pkg. yellow rice
1 fryer, cut up
1 lg. bell pepper, diced
1 med. onion, diced
3-4 stalks celery, diced
2 tbsp. butter

Brown bacon; drain. Add 2 tablespoons butter and add diced vegetables and saute. Boil chicken, remove from bone. Cook rice in chicken stock until almost done. Add vegetables and chicken and cook until rice is done. Serves 10 to 12 people.
