MOTHER'S UPSIDE DOWN CAKE | |
1/4 lb. butter 1 c. brown sugar 1 can pineapple slices Cherries 1/2 c. chopped walnuts 1 1/2 c. flour 1 c. sugar 2 tsp. baking powder 1/2 tsp. salt 2 eggs 2 tbsp. shortening Milk Vanilla Put butter in a 10 inch spider, add brown sugar, then fill spider with pineapple slices. I cut pineapple slices in half and lay them like C's in spider, you get more slices in pan. Fill pineapple holes with cherries. Sprinkle with chopped walnuts. Sift flour, sugar, baking powder, and salt into bowl. Break 1 egg into measuring cup, add 2 tablespoons shortening, and finish filling cup up with milk. Add to flour mixture and beat. Add one more egg, beat. Mix in vanilla. Pour batter over pineapple in spider. Bake at 350°F for 30 to 40 minutes, or until cake tests done. Serve with whipped cream. |
