INSTANT TOMATO AND APPLE CHUTNEY

1 tbsp. butter
1 med. onion, chopped
2 cloves garlic, minced
2 med. sweet apples, peeled, cored and diced
1 lb. very ripe red tomatoes, chopped OR 1 (14 oz.) can plum tomatoes with liquid, chopped
1 tbsp. honey
1 tbsp. soy sauce
1 tsp. grated ginger
1 tsp. ground cumin
1/2 tsp. cinnamon
1/4 tsp. red or cayenne pepper
1/4 c. currants or raisins (optional)

Heat butter in large skillet. Add onions and garlic, saute until translucent. Add apples, tomatoes, honey and soy sauce. Cover and cook on low heat for 10 minutes, stirring once or twice. Add remaining ingredients except ginger and red pepper. These last two ingredients should be added gradually, they determine the degree of spiciness you want.

Simmer, uncovered, over very low heat for about 20 minutes or until tomatoes are reduced to a loose sauce. Taste and adjust seasoning.
