MOM'S SWEET GREEN TOMATO RELISH 
6 onions
6 sweet (red) peppers
24 lg. green tomatoes
6 c. granulated sugar
1 qt. cider vinegar
1/2 c. mixed pickling spice

Grind the onions, peppers and tomatoes together and sprinkle with 2 tablespoons salt. Let stand overnight. (A food processor can be used.) Bring vinegar and sugar to a boil and add drained vegetables. Bring to a boil and simmer 20 minutes. Put in canning jars and process. Yield 10 pints.

This was my first time to try anything like this. I found the recipe a little vage. I used 8 to 9 cups of tomatoes. I used Roma type green tomatoes. For the pickling spice, I used one 1.5 oz. McCormick Pickling Spice. I wrapped it in a cheese cloth and cooked it in the mixture, then removed it before canning.

The relish came out GREAT!
