GRANDMA'S STUFFED ARTICHOKES 
4 artichokes
3/4 c. grated Parmesan cheese
1 clove garlic, minced
3/4 c. bread crumbs
1 tbsp. chopped parsley
1/2 tsp. salt
1/4 tsp. pepper
Olive oil

Wash artichokes and cut off ends of leaves. Cut off the stem evenly, so artichokes will be able to sit upright. Open artichokes by hitting on a hard surface.

In a medium mixing bowl, mix bread crumbs, cheese, garlic, parsley, salt and pepper together. With a spoon, pour the mixture into the open leaves, then sprinkle olive oil over all until just moist. Stand the artichoke upright in a large pot, and add an inch or so of water. Cover pot and steam 30-40 minutes or until a leaf comes off easily.
