CHEESE POTATOES 
6 med. potatoes (or 20 oz. bag hash browns)
2 c. shredded cheese (Colby, Swiss or cheddar)
1 1/2 c. sour cream
1/3 c. chopped onion
1 tsp. pepper
2 tbsp. butter

Cook potatoes, peel and shred. Combine cheese and butter in saucepan. Stir until almost melted. Remove from heat and blend in sour cream, onion, salt and pepper. Fold in potatoes. Bake at 350 degrees in greased casserole dish for 30 to 45 minutes.
