POTATO CHEESE SOUP 
3 carrots, chopped
2 sticks celery, chopped
4 med. potatoes, chopped
12 oz. American cheese, grated
12 oz. Swiss cheese, grated
12 oz. Cheddar cheese, grated
Salt & pepper to taste

Place potatoes, carrots and celery, salt and pepper in a large saucepan and cover with water. Boil until carrots are tender. Dissolve cornstarch in water. Pour into the potatoes and add grated cheeses. Let thicken.
