OVER - NIGHT CARAMEL COOKIES 
7 c. sifted flour
4 c. brown sugar
1 tsp. salt
1 tbsp. baking soda
1 tbsp. cream of tartar
1 c. melted shortening (do not have hot)
4 eggs, well beaten
1 tbsp. vanilla

Mix the ingredients well adding the vanilla last. Let stand overnight in refrigerator. Next day form into 4 rolls adding 1/2 cup of nuts in one roll, 1/2 cup of raisins in one roll, 1/2 cup of chocolate chips in one roll, 1/2 cup of coconut in one roll. Slice 1/4 inch thick. Bake at 350 degrees on a greased cookie sheet until nice and brown. Do not overbake. These cookies freeze well.
