RHUBARB PUDDING | |
3 to 4 c. chopped rhubarb 3/4 c. sugar 3 tbsp. butter 1/2 c. milk 1 c. flour 1 tsp. baking powder 1 c. sugar 1 tbsp. cornstarch 1/4 tsp. salt 1 c. boiling water Place rhubarb in 9 x 9 inch baking pan. Mix together sugar, butter, flour and baking powder. Pour this batter over the rhubarb. Mix 1 cup sugar with the cornstarch and salt. Sprinkle this dry over the batter. Pour the boiling water over all and bake 1 hour at 375 degrees. Great with ice cream or whipped topping or just by itself. |
