BAKED RICE 
2 c. rice, uncooked long grain
2 cans beef consomme
2 cans onion soup
2 sticks butter
2 c. chopped celery
1 (10 oz.) can chopped mushrooms, drained
2 c. diced, cooked chicken

Saute celery and mushrooms in heavy tightly covered roaster. Add rice, soup, butter and chicken. Stir and bake covered 1 1/2 - 2 hours in 325 degree oven. Stir once or twice during baking. Do not overbake.
