ZUCCHINI BREAD 
4 eggs
2 c. sugar
1 c. vegetable oil
3 1/2 c. flour
3/4 tsp. baking powder
1 tsp. salt
1 1/2 tsp. baking soda
1 tsp. cinnamon
2 c. grated zucchini
1 tsp. vanilla
1 c. walnuts, chopped
1 c. raisins

Beat eggs. Add sugar and oil. Combine dry ingredients, add to first mixture, alternating with zucchini. Stir in raisins, walnuts and vanilla. Pour into greased and floured bread pan. Bake at 350 degrees for 1 hour (on low shelf) or until loaves test done. Let stand 10 minutes then turn out onto cooling rack. Makes 2 loaves.
