CODFISH CAKES 
1/2 lb. salted codfish
2 beaten eggs
3 tbsp. chopped onions or scallions
2 tbsp. green bell peppers
Black pepper
Flour, to form batter
Oil to fry

Soak codfish overnight to remove desired salt. Boil in fresh water until tender. Remove skin and bones. Flake codfish. Add beaten eggs, chopped onions and green pepper and black pepper. Add flour to form batter. Fry in hot fat.

My mom was born in Halifax in the 20's and codfish cakes are banquet food to us. No bell peppers, just lightly mashed potatoes, salt cod flaked after boiling and draining, eggs and floured counter to form the cakes. she fried them in bacon fat...i use peanut oil or shortening flavoured with a little bacon fat...great.
