CODFISH CAKES 
3 lb. boneless dry cod
3 lb. white potatoes
1 med. onion, chopped
1 tbsp. parsley
1 stick butter
2 lg. eggs

Boil codfish 1 1/2 hours. Change water, boil in fresh water 1 additional hour. Drain and cool. Peel potatoes; boil until tender, then mash. Shred codfish and add to potatoes with other ingredients. Shape into cakes. Fry in hot oil.
