CODFISH SALAD - SERENATA 
1 lb. dried, salted codfish fillets
1 lb. onions, peeled and sliced
1 lb. tomatoes, peeled and sliced
1 c. olive oil
1/2 c. vinegar
1/2 tsp. salt
1/4 tsp. ground pepper

Soak codfish to cover for 4 hours. Drain well. Boil codfish in enough water to cover for 15 minutes. Drain and rinse in fresh water. Discard skin and bones, and shred flesh.

Arrange codfish on a platter. Garnish with onions and tomato slices. Combine olive oil, vinegar, salt and pepper to make a sauce. Pour sauce over fish, chill, and serve cold.
