ITALIAN MEAT LOAF 
1 1/2 lbs. lean ground beef
1 egg, beaten
3/4 c. cracker crumbs
1/2 c. chopped onion
1/3 c. catsup
1 (8 oz.) can tomato sauce
2 tbsp. grated Parmesan cheese
1 tsp. salt
2 tbsp. fine herbs
1/2 tsp. sweet basil
1/8 tsp. pepper
1/2 tsp. sugar
1 clove garlic
2 c. grated Mozzarella cheese

Combine ground beef, egg, cracker crumbs, onion, catsup, half of the tomato sauce, Parmesan cheese, seasonings and sugar. Mix well. Shape into a flat 10x12 inch rectangle on waxed paper sprayed with non-stick spray. Sprinkle Mozzarella cheese evenly over meat mixture.

Roll up jelly roll fashion, lifting one end of the waxed paper as you go. Press ends and seam to seal. Place in a 9x13 inch baking dish that has been lined with heavy duty foil and sprayed with non-stick spray. Bake at 350 degrees for 1 hour. Drain off fat. Pour on remaining 1/2 can of tomato sauce and bake 15 minutes longer.
