ITALIAN MEAT LOAF 
1 1/2 lbs. lean ground beef
1 egg
3/4 c. soda crackers (22)
1/2 c. finely chopped onion
1 (8 oz.) can tomato sauce
1 tsp. salt
1/2 tsp. oregano
1/8 tsp. pepper
2 c. shredded Mozzarella cheese (I use 6 oz. pkg.)

Combine ground beef, egg, cracker crumbs, onion, 1/3 cup tomato sauce (plus), salt, oregano, pepper. Mix well; shape into flat rectangle about 10 x 12 inch on waxed paper. Sprinkle Mozzarella cheese over, roll like jelly roll and press ends to seal. Bake at 350 degrees for 1 hour. Drain off excess fat. Pour remaining sauce over top. Bake 15 more minutes.
