ITALIAN MEAT LOAF 
2 lb. ground chuck
1/2 c. tomato juice
1/2 tsp. oregano
2 tbsp. parsley
2 eggs
1 clove garlic, minced
1 slice bread, crumbled
Salt and pepper (1/4 tsp. each)
4-6 thin or med. slices boiled ham
4 oz. shredded Mozzarella cheese

Mix first 8 ingredients and lay out on a 10x12 piece of foil. Flatten meatloaf and place ham and shredded Mozzarella on top. Use foil to lift and roll the meat loaf into a "roll", working the sides together so the cheese does not fall out.

Place in loaf pan, seam side down. Bake 1 hour. Place 3 slices Mozzarella cheese on top of meat loaf and bake 5 more minutes.
