JUNE SHORTCAKE 
1/4 c. shortening
1/2 tsp. vanilla
1 c. flour
1 1/2 tsp. baking powder
1/3 c. liquid unsweetened pineapple juice or 1 tbsp. lemon juice + cold water to make 1/3 c.
1/2 c. sugar
1 egg
1/4 tsp. salt

Thoroughly cream shortening and sugar; add vanilla and egg; beat until fluffy. Add sifted dry ingredients, alternately with liquids. Bake in greased 8" layer pan at 350 degrees for 25 minutes. Cool. Split and spread with vanilla filling. Prepare 1 (4 oz.) package vanilla pudding as directed. Use 2 cups milk. Cool. Fold in 1/2 cup heavy cream, whipped. Spread 1/2 of filling between layers and top with 2 cups sliced strawberries, sweetened. Top cake with remaining filling and garnish with whole berries.
