PIGNOLI COOKIES 
1/2 c. sugar
1/2 c. confectioners sugar
1/4 c. flour
1/8 tsp. salt
1 (8 oz.) can almond paste
2 egg whites
1 pkg. pignoli nuts

Stir dry ingredients; set aside. Break up almond paste. Add egg whites; mix until smooth. Stir in dry ingredients. Drop by teaspoon on slightly greased sheet 2 inches apart. Place several nuts on top. Bake in 350 degree oven 20-25 minutes.
