MACARONI AND CHEESE IN WHITE
SAUCE
 
3/4 lb. macaroni
White sauce (to follow)
1 tbsp. butter
2 c. grated cheddar cheese
Salt and pepper
Nutmeg

Cook noodles according to package directions, just until firm. While noodles are cooking, prepare white sauce. Drain noodles and return to pan. Add 1 tablespoon butter and mix well. Toss noodles with white sauce until all noodles are coated.

In 9" buttered baking dish, place about a third of the noodles in even layer. Top with light sprinkling of salt and nutmeg and pepper. Top with 1/3 of the cheese. Repeat layers twice, end with cheese.

Bake in preheated 350 degree oven for 15-20 minutes until cheese melts and mixture is bubbly. Let stand a few minutes. Serves 6.

WHITE SAUCE:

2 tbsp. butter
2 tbsp. flour
1/2 clove garlic, minced
1 1/2 c. milk
1/4 tsp. salt
Dash of pepper
Dash of nutmeg

Melt butter in small saucepan; add garlic and saute over low heat until golden. Stir in flour to make a smooth paste, cook over low heat until bubbly. Add milk gradually, stirring constantly. Add seasonings and cook, stirring until sauce thickens and comes to a boil.

This is a great recipe. I modified it a bit by melting the cheese in the white sauce and added some ham cubes, then baked it. YUMMY!!!!
