STUFFED FISH 
8 fillets of flounder or bass
1/3 c. finely chopped celery
2 tbsp. finely chopped onion
1/2 c. melted butter
2 to 3 slices white bread (torn into small pieces)
1 (5 oz.) pkg. frozen shrimp (optional) or 1 sm. can shredded crab
A dash of fresh parsley, lemon juice, garlic powder, black pepper and poultry seasoning

Saute celery and onion in butter. In small bowl, combine bread pieces, shrimp or crab if used, parsley, lemon juice and other seasonings. Grease a cookie sheet. Place 4 fish fillets on it and season fish with garlic powder.

Spread filling over fillet and cover with another fillet. Over top put celery and onion mixture. Bake at 350 degrees for 20 minutes or until fish flakes apart. Baste once while baking.
