SWEET POTATOES WITH ORANGE GLAZE 
8 sweet potatoes
3 tbsp. butter
1 tbsp. cornstarch
2 tbsp. cold water
3/4 c. orange juice
1/4 c. lemon juice
1/2 c. brown sugar
1/2 c. white sugar

Choose sweet potatoes of uniform size. Scrub with a stiff brush. Boil in salted water for 40 minutes or until tender. Drain and cool.

Peel and halve each potato. Spread the bottom and sides of a large shallow casserole dish with 2 tablespoons softened butter. Place the potatoes cut side down in the dish. spread the rest of the butter over the tops.

Dissolve cornstarch in 2 tablespoons cold water and combine with the rest of the ingredients. Bring this mixture to a boil and boil for 2 minutes. Cool slightly and pour over the potatoes. Sprinkle generously with salt and pepper and bake in 375°F oven for 30 minutes.
