BROCCOLI CHEESE TWICE BAKED
POTATOES
 
6 med. baking potatoes
1/2 c. sour cream or yogurt
3 tbsp. butter
1/2 tsp. salt
1/4 tsp. pepper
2 green onions, thinly sliced
1 1/2 c. chopped broccoli
1 c. (4 oz.) grated Cheddar cheese
Paprika

Bake potatoes at 425 degrees for 45-60 minutes or until soft. Cut lengthwise slice in top of potatoes. Scoop out pulp and put in bowl. Mash potatoes. Add sour cream or yogurt, butter, salt and pepper, broccoli, onion and 3/4 cup cheese. Refill potato shells. Top with remaining cheese. Sprinkle with paprika. Bake at 425 degrees for 20-25 minutes or until heated through.
