FAR EAST PINEAPPLE CHICKEN 
6 tbsp. butter
2 1/2 tbsp. curry powder
1 c. chopped green onion
1/2 c. flour
2/3 c. chopped green pepper
2 2/3 c. milk
1 c. half and half
2 1/2 tsp. salt
4 c. cooked chicken
2 (13 1/2 oz.) cans pineapple chunks drained
Hot cooked rice

Cut cooked chicken into small pieces you can also use (beef, turkey and lamb) instead of chicken. Combine butter, curry, onion and pepper. Cook until vegetables are soft but not brown.

Blend in flour, add milk, half and half, and salt. Cook stirring constantly until mixture boils and thickens. Add chicken and pineapple. Heat thur, but do not boil. Serve over hot rice with maybe cashews, bananas, peanuts, raisins, olives, etc.
