HAM AND BROCCOLI CORN BREAD BAKE 
1/4 cup oil
1 medium onion, chopped
2 cups cooked ham, chopped
2 eggs
1/2 cup milk
1 cup self-rising corn meal mix
1 can cream style corn
2 cups frozen broccoli florets
4 oz. (1 cup) shredded Cheddar cheese
Dash of hot sauce

Heat oven to 400°F. Heat 1 Tbsp. of the oil in a 10 inch skillet over medium heat until hot. Add onion. Cook. Stir until tender. Add ham. Cook 2 to 3 minutes until hot. In a large bowl, lightly beat eggs. Add milk, remaining oil, corn meal mix and corn. Blend well. Stir in broccoli, cheese, onion, ham mixture and hot sauce. Pour into greased iron skillet.

Bake at 400°F for 30 to 35 minutes or until brown.

Serves 6.
