CHERRY FRENCH TOAST 
3 eggs
1/2 c. milk
1/2 c. cherry preserves, orange marmalade, or red raspberry jam
16 slices very thinly sliced firm-textured bread
1 tbsp. butter
Fruit-flavored syrup (optional)

In a shallow bowl, with a wire whisk or fork, beat eggs and milk; set aside. Spread 1 tablespoon of the preserves on each of 8 slices of the bread; top each with remaining bread slices, pressing together lightly. Dip filled bread into egg mixture, thoroughly coating both sides.

In a skillet or on a griddle cook filled bread in hot butter over medium heat about 2 minutes on each side or until golden brown. Add more butter as needed. Serve with fruit-flavored syrup. Makes 4 servings.
