ZUCCHINI AND BROWN RICE 
1 1/2 lbs. zucchini
2 c. brown rice, cooked
Juice of 1 lemon
3/4 c. parsley, chopped
1 tsp. salt
Pinch of pepper
1 tsp. dried basil
2 tbsp. oil
1 c. Ricotta or cottage cheese
1/2 c. Cheddar cheese, shredded
2 tbsp. Parmesan cheese, grated

Slice zucchini in 1/4 inch rounds. Steam until done but still firm. Preheat oven to 350 degrees. Mix rice with lemon juice, parsley, salt, pepper, and basil. Oil a baking dish. In it, layer rice mixture, Ricotta cheese, and zucchini. Top with Cheddar cheese. Bake, uncovered, for 10 to 15 minutes. Sprinkle with Parmesan cheese. Serves 4 to 6.
