RED VELVET CAKE 
1/2 c. shortening
1 1/2 c. sugar
2 eggs, unbeaten
1 tsp. salt
1 tsp. vanilla
1 c. buttermilk
2 1/2 c. cake flour

COLORING MIXTURE:

2 tbsp. cocoa
4 oz. red food coloring
1 1/2 tsp. baking soda
1 tbsp. vinegar

ICING:

1 c. milk
5 tbsp. flour
1 c. granulated sugar
1 c. butter (creamed)
1 tsp. vanilla

Cream shortening and gradually add sugar. Mix in eggs and vanilla. Add flour and salt alternately with the buttermilk. Make a paste of the coloring mixture and add to the batter. Bake in a 350 degree oven.

ICING: Cook 1 cup milk and 5 tablespoons flour until thick and let set until COLD. Then add 1 cup granulated sugar, 1 cup butter (creamed) and 1 teaspoon vanilla. Beat this until of proper consistency. If not stiff enough, add 1 cup of confectioners' sugar.
