RED VELVET CAKE 
1 1/2 c. sugar
1 1/2 c. cooking oil
2 eggs
2 1/2 c. plain flour
1 tsp. salt
1 tsp. baking powder
2 tsp. cocoa
1 tsp. vanilla
1 c. buttermilk
2 (1 oz.) bottles red food coloring
1 tsp. vinegar
1 tsp. baking soda

Cream sugar and eggs together; add buttermilk, flour, salt, baking powder, cocoa, and vanilla. Beat batter until smooth. Add vinegar and soda; blend well. Bake at 350 degrees in two 8 inch greased and floured cake pans for 30-35 minutes. Use cream cheese frosting.
