RED VELVET CAKE 
2 1/2 c. all purpose flour
1 tsp. baking soda
1 tsp. salt
1 1/2 c. sugar
1 c. buttermilk
1 3/4 c. vegetable oil
2 eggs
1 tsp. vanilla
2 oz. red food coloring
1 tsp. cider vinegar

Preheat oven to 350 degrees. Sift dry ingredients together. Cream sugar, buttermilk, oil and eggs. Blend dry ingredients into creamed mixture. Add vanilla, coloring and vinegar. Turn into 3 greased and floured 8 inch layer pans. Bake for 30 to 35 minutes. Cool, assemble, frost.

FROSTING:

1 pkg. (8 oz.) cream cheese, softened
1/2 c. butter, softened
1 box (1 lb.) confectioner's sugar, minus 1/2 c.
1 tsp. vanilla

Mix cream cheese, butter and sugar until smooth. Add vanilla. Mix well. Spread between layers, on sides and top of cooled cake.
