RED VELVET CAKE 
2 c. Wesson oil
2 eggs
1 1/2 c. plain flour
1 tbsp. vinegar
1 c. buttermilk
1 tsp. salt
2 bottles red food coloring
1 tsp. vanilla
1 tbsp. cocoa
1 tsp. baking soda
2 c. sugar

Sift dry ingredients together and set aside. Cream Wesson oil, sugar and eggs. Add soda and vinegar to buttermilk. Add other ingredients gradually alternating dry ingredients and buttermilk. Add food coloring. Bake at 350 degrees until toothpick inserted into center of cake comes out clean.

ICING:

1 (8 oz.) pkg. cream cheese
1 tsp. vanilla
Grated nuts if desired
1 stick butter
1 box powdered sugar

Cream until well blended. Ice cake when cool. Sprinkle grated pecans on top for decorative effect.
