YEAST QUICHE CRUST 
1 c. all-purpose flour
1 pkg. quick acting yeast
1/2 tsp. salt
1/2 c. warm water
1 tbsp. shortening

In a medium bowl, combine 1/2 cup flour, the yeast, and salt; mix well. Add water (120-130 degrees) and shortening to the flour mixture. Mix by hand until almost smooth. Gradually stir in the flour to make a firm dough. With lightly floured fingers, press the dough into a 10-inch pie pan to make a crust.

FILLING:

Almost any filling of this liquid content (3 eggs and 2 cups half and half) will do. The use of more bulky solids will require some subtraction of the liquid.

8 slices bacon, cooked and crumbled
1 c. (4 oz.) shredded cheese (Swiss is good; cheddar is stronger flavor)
3 eggs
2 c. half and half
1 tsp. salt
Dash pepper

Sprinkle the bacon bits and cheese in the crust, evenly. In a large bowl, beat the eggs until foamy. Mix in the remaining ingredients and pour over the bacon/cheese. Bake in a preheated 400 degree oven for 30-35 minutes until a knife comes clean from the center.
