RED VELVET CAKE 
3 c. plain flour
2 c. sugar
1 1/4 c. Crisco oil
1 sm. bottle red food coloring
3 eggs
2 tsp. vinegar
1 tsp. salt
1 tsp. baking soda
2 tsp. vanilla flavor
1 c. buttermilk

ICING:

2 (8 oz.) pkgs. cream cheese
1 stick butter
2 boxes confectioners' sugar
2 tsp. vanilla
2 c. chopped pecans

Combine all cake ingredients. Beat mixture until smooth. Pour into 9 inch cake pans; 3-4 layers. Bake at 300 degrees for 30-35 minutes.

Icing: Mix ingredients until smooth.
