FRITTATA 
3/4 c. chopped green pepper
1 1/2 c. sliced mushrooms
1 1/2 c. chopped zucchini
3/4 c. chopped onion
1 garlic clove, minced
3 tbsp. oil
1/4 c. light cream
6 beaten eggs
1 lb. cream cheese, diced
1 1/2 c. shredded Cheddar cheese
2 c. cubed bread
1 1/2 tsp. salt
1/4 tsp. pepper

Saute green pepper, mushrooms, zucchini, onions and garlic in oil until zucchini is crisp and tender. Cool slightly. Beat eggs with cream. Add cream cheese, Cheddar cheese, bread, salt and pepper. Saute vegetables. Mix well.

Pour into greased 10 inch springform pan or casserole dish. Bake at 350 degrees for 1 hour or until set. Cool 10-20 minutes before cutting into wedges to serve. (Recipe may be cut in half.)
