FRITTATA LOUTTA OMELET 
2 tbsp. Crisco (butter)
6 eggs
1/2 tsp. salt
Dash of pepper
1/2 c. grated Swiss cheese

FILLING:

1/2 c. diced ham or bacon
1 c. sliced mushrooms
2 tbsp. chopped parsley
2 tbsp. chopped green onions
2 tbsp. chopped green and red peppers

Beat eggs with salt and pepper. Stir in grated cheese and filling. In a 10 inch heavy skillet melt Crisco butter over medium heat. Add egg mixture and lower heat. Cook undisturbed until lightly brown. Put under broiler and allow to brown.
