FRITTATA DI ZUCCHINI 
1/2 c. sliced zucchini
2 slices onion
2 tbsp. butter
3 eggs
1/4 tsp. basil
1/2 tsp. salt
1/2 tsp. pepper
2 tbsb. diced tomato
1 tbsp. grated cheese

Saute zucchini and onion, 1 tablespoon butter in small skillet until tender. Combine eggs, water, basil and pepper in bowl. Beat until egg yolks and whites are blended. Melt remaining butter in omelet pan. Add zucchini mixture to egg mixture, pour into hot omelet pan. Pull set edges away from pan, allowing soft part to flow underneath. Cook until bottom is set. Sprinkle tomato and cheese over omelet. Broil this 6 inches from heat until cheese melts. and top is lightly brown. Serve at once.
